Pipevine Swallowtail – July 31th


This my friend is the Pipevine Swallowtail, it is a little bit more rare in my area. And if I could tell you how excited I am that I was able to get some photos of this butterfly, I was giddy! I think the guy that was walking around the garden at the same time I was thought I was out of my mind. I was giggling and following the butterfly from flower to flower. Oh well!

Alone in the night
On a dark hill
With pines around me
Spicy and still,

And a heaven full of stars
Over my head,
White and topaz
And misty red;

Myriads with beating
Hearts of fire
That aeons
Cannot vex or tire;

Up the dome of heaven
Like a great hill,
I watch them marching
Stately and still,

And I know that I
Am honored to be
Of so much majesty.

Cloudy Monday – July 29th


My brain is so full of thoughts, mostly the thought that in a few short weeks I move to a new house. I have been packing like crazy and actually have a certain amount of excitement mixed with a twinge of nervousness. New seasons of life are so scary, mostly because I am comfortable and happy with my little quiet life. But for some reason God decides to throw a wrench in my plans from time to time, usually in some way to stretch me and grow me from fear to a place of boldness. I have lived a long time in that place of fear, the fear of what if, but right now I feel surprisingly brave. So here we go…

Chicken Fettuccine Alfredo with Veggies – July 27th


Tonight’s recipe is Chicken Fettuccine Alfredo with Veggies from Taste of Home Simple and Delicious. Really good and really easy. It is ready in about 20 minutes.

1 Package (9 oz) refrigerated fettuccine
3 cups frozen mixed vegetables
1 package (9 oz) ready to serve roasted chicken breast strips.
1 1/2 cups Alfredo sauce
1/2 cup shredded Parmesan cheese

Fill a Dutch oven two-thirds full of water; bring to a boil. Add fettuccine and vegetables; return to boil. Cook on high for 2-3 minutes or until tender; drain. Stir in chicken and Alfredo sauce; heat through. Sprinkle with cheese.

It was really filling and I have tons of left overs. I hope it freezes well.

Butterfly Dress – July 27th


So I have this dress, it is flowers on it with many different colors of blue. For some reason every time I go to the botanical garden it attracts butterflies. They just randomly land on me for some reason and just hang out for a while. Happen again this morning. At least I can get some pretty cool shots of them on my blue dress. Aka: the butterfly dress.


Asian Beef and Noodles – July 26th


Tonight for dinner I made Asian Beef and Noodles from the Taste of Home Simple and Delicious Cookbook. This is one of the newer books, published in 2013. This is a really simple recipe but really tastie!
Here’s what you will need:


1 lb lean ground beef
2 packages Oriental ramen noodles, crumbled
2 1/2 cups of water
2 cups frozen broccoli stir-fry vegetables
1/4 tsp ground ginger
2 tbsp thinly sliced green onions


In a large skillet, cook beef over medium heat until no longer pink; drain. Add the contents of one ramen noodle flavoring packet; stir until dissolved. Remove beef and set aside.


In the same skillet, combine the water, vegetables, ginger, noodles and contents of remaining flavoring packet. Bring to a boil. Reduce heat; cover and simmer for 3-4 minutes or until noodles are tender, stirring occasionally.


Return beef to the pan and heat through, stir in onion.

It is ready in about 20 minutes. I actually used about 3 cups of water and added a little bit more green onion.
